Beloved restaurant reopens with refreshed menu and ambiance |
Hearthstone Kitchen & Cellar is making a much-anticipated return to Red Rock Resort in Summerlin on January 30, 2026.
After closing in April 2023 to make way for a new concept, the restaurant's revival comes in response to strong community demand.
Scott Nelson, vice president and general manager of Red Rock, expressed excitement about the reopening, noting that guests have truly missed Hearthstone and its return is highly anticipated.
Andy Masi, founder of Clique Hospitality, emphasized that Hearthstone has always been more than a restaurant; it's a gathering place.
The redesigned 6,500-square-foot space features a warm yet elevated atmosphere, including a lounge and an expanded bar with classic bar games.
Executive Chef Jason Janson, whose experience includes a stint at é by José Andrés, leads the kitchen.
The menu offers approachable, ingredient-driven dishes with a touch of refinement.
Highlights include a raw bar with fresh oysters and Maine lobster tail, starters like roasted garlic hummus with warm garlic naan, and yellowfin tuna pizza with olive oil and truffle aïoli.
Wood-fired pizzas remain a staple, featuring options like the Abe Froman with garlic sausage, mozzarella, and chili flakes, and another topped with prosciutto, mozzarella, Parmesan, aged balsamic, and arugula.
Signature entrées include a bucket of fried chicken served with buttermilk biscuits, coleslaw, honey butter, and house-made sauces.
Other offerings are mix-your-own bucatini carbonara with guanciale, Parmesan, black pepper, and a sunny-side egg; pan-seared halibut with gremolata, garlic, thyme, lemon, and couscous; and rotisserie-roasted prime rib with jus and creamed horseradish.
The beverage program boasts an extensive wine cellar and classic cocktails like martinis, Negronis, and Palomas.
Creative drinks include a spiced pear mule with vodka, peach purée, ginger beer, and cinnamon, and a Fireside Smash with bourbon, fig preserves, thyme, and lemon.
Weekend brunch features almond brioche French toast, lemon curd pancakes, biscuits and gravy, classic and lobster Benedict, cacio e pepe carbonara, and a shareable bagels-and-lox tower, plus $25 bottomless mimosas and bloody marys.
Hearthstone will be open Sunday through Thursday from 4 to 10 p.m., Friday and Saturday from 4 to 11 p.m., and for brunch every Saturday and Sunday from 10 a.m. to 3 p.m.
