Chef Oscar Amador Unveils Amador Cocina Fina in Las Vegas

A Culinary Evolution in Chinatown's Dining Scene

In a subtle yet significant move, Chef Oscar Amador has introduced Amador Cocina Fina to Las Vegas's Chinatown, marking a new chapter in his culinary journey. 

 

This establishment occupies the former space of EDO Tapas & Wine, which concluded its seven-year tenure in September 2025. 

 

Chef Amador describes the new venture as a natural progression rather than a reinvention, emphasizing a seamless transition from EDO to Amador Cocina Fina.

 

The menu showcases Spanish cuisine infused with personal memories and refined techniques. Diners can indulge in a 16-course tasting menu priced at $135, featuring innovative dishes such as Hokkaido uni carrot cake and a macaron filled with marinated rabbit rillettes.

 

Additionally, the à la carte offerings include items like wild-caught shrimp with peanut salsa matcha and a daily ceviche crafted from dry-aged fish.

 

Located at 3400 S. Jones Blvd., Suite 11-A, Amador Cocina Fina operates from Wednesday to Monday, 4 p.m. to 11 p.m., with the last seating at 10 p.m.
