Eggslut Debuts at Rio Las Vegas, Bringing Gourmet Breakfast Off-Strip

Eggslut, the renowned Los Angeles-based eatery celebrated for its gourmet egg sandwiches, is set to open its doors at the Rio Las Vegas on December 19, 2025.

 

This marks the brand's first venture off the Strip, offering both locals and visitors a new destination for indulgent breakfast and lunch options.

 

Located conveniently near the resort's front desk, the new Eggslut will operate daily from 7 a.m. to 2 p.m., providing easy access and ample free parking for guests.

 

The menu features signature items such as the Fairfax sandwich, which combines soft scrambled eggs, caramelized onions, cheddar cheese, and sriracha mayo on a warm brioche bun.

 

Another highlight is the Bacon, Egg & Cheese, elevated with applewood smoked bacon and chipotle ketchup.

 

For those seeking a unique experience, the Slut offers a coddled egg over silky potato purée, served with slices of baguette.

 

Additional sides include truffle hashbrowns and buttermilk biscuits, ensuring a comprehensive breakfast experience.

 

Eggslut began as a food truck in Los Angeles in 2011 and has since expanded globally, with locations in cities such as London and Tokyo.

 

The Rio location joins the existing Las Vegas outpost at The Cosmopolitan, which opened in 2016 and continues to serve its loyal customer base.

The opening of Eggslut is part of the Rio's ongoing efforts to revitalize its dining options, which also include the recent additions of Canteen Food Hall, Luckley Tavern & Grill, and High Steaks Vegas by chef James Trees.
